To say that Victor Tiffany brings a lifetime of restaurant management
experience to his post as Vice President of Food and Beverage at Borgata is
a bit of an understatement. His restaurant experience didn’t begin when he
caught the buzz as a teenage server. His career began as a small boy
sweeping the floor and hanging out with the restaurant staff at his father’s
Scotch ‘N’ Sirloin restaurant chain, which was based in upstate New York
and took the East Coast by storm in the 1960s.
By the time he was old enough to work as a server, he already knew that
he wanted to follow in his father’s footsteps. Tiffany could have easily
stayed with the family business. Instead, he traveled around the country,
cooking in restaurants from Colorado to California.
At age 21, he decided to go to Cornell University’s renowned School of
Hotel Administration, followed by more education at the Cordon Bleu in Paris
where he studied classical French cooking.
While Tiffany credits his father with planting the seed for his passion
for restaurants, it is Drew Nieporent of the Myriad Restaurant Group who
provided the vision and philosophy that inspired him to push his career to
even greater heights.
As a member of Nieporent’s team for 15 years, Tiffany participated in
the development of some of the most prestigious and respected restaurants in
the country. He served as Restaurant Director for Robert DeNiro’s Tribeca
Grill. As Myriad’s Director of Special Projects, he opened Nobu Next Door
with acclaimed chef Nobu Matsuhisa. He also opened TriBakery, Layla, San
Francisco’s Rubicon and others. As a partner with Myriad, Tiffany also
helped develop restaurant programs for Heartbeat, the restaurant in Starwood’s
first W Hotel in New York, and later with other W locations in Atlanta, San
Francisco and Seattle.
After leaving Myriad, Tiffany’s next job was with the Boca Raton Resort
and Club in Florida, where he oversaw all food and beverage operations.
Tiffany’s charge was to infuse the resort with new energy. He did so by
creating three new concepts, Lucca, Bar Luna, and 27 Ocean Blue.
Tiffany was hired in February 2002 to be the man responsible for
developing Borgata’s array of dining experiences, from fine dining
restaurants to high-energy lounges bars, to the very best catering and
banquet facilities. Working with a staff of 1,400, including two restaurant
directors on his team, Tiffany’s goal is to maintain his track record of
creating culinary and social destinations that make everyone take notice.
How long have you lived in Atlantic City?
Approximately 4 years, since January 2002.
Are you married or single?
I'm Happily married and have two children, Gigi 10 years and Ava 5
years.
What do like most about Atlantic City?
AC was a very competitive gaming market when I arrived, but only recently
has the non-gaming programming begun to evolve and grow. I like the fact
that AC has begun to position itself beyond gaming because if, “We want to
be more like Vegas...” , we’d better start to position ourselves more
like Vegas. Our city will need to focus on offering additional non-gaming
amenities if we expect to grow this market.
Describe your perfect day in Atlantic City.
(Summer 2006)- First, take a day off…. playing on Longport beach in the
morning with my family, shopping late afternoon at The Forum Shops at The
Pier, then heading over to Borgata for a massage at Spa Toccare, a quick
dinner at Bobby Flay Steak, then enjoying the best kick-ass Entertainment in
A.C. in our Events Center, followed by a VOMO cocktail in BBAR, private room
bottle service at MIXX nightclub, then a 4am steak and eggs breakfast with
friends at The Metropolitan! (Sleep 4 hours, repeat).
What originally brought you to AC?
I came down from NYC to meet with Bob Boughner about this project, and after
viewing his plan for Borgata it just blew me away. …..our CEO (Bob) is a
true visionary that inspires us everyday without all the usual ego and
baggage.
Where do you see the city in 10 years?
More non-gaming amenities including world class restaurants, bars,
entertainment/shows, nightclubs, LOTS of condominiums, newer and bigger
arenas, a high speed railway to finally get people in from NYC and Philly
and MORE HOTEL ROOMS….but overall- more diversified!
What is your part in getting there?
I want us to start by expanding and evolving Borgata’s dining and
nightlife selections, while continuing to offer new products that create
increased awareness in AC. I would also like to see everyone get on the same
page- Atlantic City casinos with supporting city and legislative bodies
sharing the common goal to grow and expand this market- this town has
tremendous potential once everyone shares the same vision.
Tell us about your favorite AC memory.
The unified vision of success our management team all shared in creating
Borgata…but the single best memory was when we opened the doors in July
2003 on time, on budget, and especially after everyone said it couldn’t be
done. It just taught me again that in order to succeed your desire for
success must be greater than your fear of failure.
You've got two hours to kill on the boardwalk, what do you do?
Hmmmm, I don’t think I’ve ever had 2 hours to kill yet! After we opened
Borgata we discovered the market wanted more great restaurants, clubs, bars,
hotel rooms and bigger spas- so we started work on our expansion project!
BUT if I had those two hours- I’d go for a run down the boardwalk.
Why should I go to the Borgata?
Borgata offers a variety of products and choices on par with the
greatest Las Vegas casinos…. I think our hotel rooms and spa are the best.
I believe our service staff including our restaurants, hotel all the way to
the dealers is the friendliest and freshest in town. While our restaurant
and wine programs as a whole are outstanding… most of all we all like to
have fun at work and it shows in our service.
Is there something that I will only find at the Borgata and not other AC hot spots?
Borgata has 4 ‘Wine Spectator’ Award of Excellence wine lists, Borgata has the best collection of Macallan’s Single Malt Scotches in America, Borgata has one of the greatest Executive Chefs I have ever worked with in Chef Ron Ross, Gypsy Bar has the best tequila collection in town with the best bar staff and live music. Borgata has world class restaurants by Luke Palladino, Susanna Foo, and soon Wolfgang Puck, Michael Mina and Bobby Flay next summer…. But best of all we have THE BORGATA BABES WHO ARE THE GREATEST COCKTAIL SERVERS IN THE UNIVERSE!!!!!!
